whiz-bang banana muffins!

This past July when we were moving my mom into her new house she found this recipe and gave it to me!

She used to make this for my older sister Jenny:)

My mom has kept this recipe for 23 years!!!

Whiz-Bang Bananas Muffins
1 cup all-purpose flour
1/2 cup quick-cooking oatmeal
1/4 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnnamon
1/8 teaspoon salt
1/3 cup milk
1 egg
2 tablespoons cooking oil
1 large ripe banana
Nonstick spray coating or shortening

Preheat oven to 400 degrees. In large mixing bowl, stir together flour, oatmeal, brown sugar, baking powder, cinnamon, and salt. Set aside. Spray muffin pan with nonstick spray coating, or grease with shortening. (I used cupcake liners since I didn't have any spray) In blender container, combine milk, egg and oil. Cover and blend till smooth. With blender running, cut up banana and blend into mixture.( if you don't have a blender, just beat together the milk, egg, and cooking oil. and mash banana by hand) Pour into bowl with dry ingredients, and stir till just moistened. Fill muffin pans 2/3 full. Bake in the oven about 20 minutes or till done. Makes 10 to 12 muffins. From american baby September 1988 issue.



 YUM!!! I didn't take very good pictures because I had two sweet girls who wanted to help cook ;)
